The Swiss made Victorinox Santoku knife has a 17cm blade that is ideal for cutting, chopping, dicing, boning, and filleting of fish, meat or vegetables. The Granton edge keeps food from sticking to the blade as you chop. The dimples act as a friction reducer to provide less drag when chopping, which enables and easier and faster motion.
